Makes: Half a litre of Strawberries in their own syrup

I love simplicity in the kitchen. Who needs the fuss of hours over a hot stove, when everyone else is relaxing? When I see an abundance of strawberries, I can’t wait to make this easy dish. Roasting strawberries brings out their natural sweetness, so no sugar is necessary. It is divine when cold poured over ice-cream or hot over cakes and desserts. It’s also a zing of taste drizzled on a salad straight from the fridge or spooned onto cold cuts of meat and fish. You can simply pour this over your morning yoghurt or breakfast cereal, with grated chocolate.
500g or 4 punnets of strawberries
3 Cinnamon sticks
A few drops of vanilla flavouring
A few drops of Balsamic vinegar
Heat oven to 200c or 390f
Wash and dry strawberries.
Take out the green stalk.
Slice in half.
Line an oven proof tray with baking paper.
Arrange strawberries with the cinnamon sticks and a few drops of vanilla essence on the baking paper.
Bake for 15 minutes. Open the oven and gently stir them around with a wooden spoon. Continue to cook for another 15 minutes.
They should look soft and moist with a lot of strawberry juice.
Allow to cool for 5 minutes and add a few drops of balsamic vinegar and stir.
Pour into a container for either serving or storing.

Chefs Tips and Tricks
Frozen strawberries work just as well, thaw before using.
Use hot, by pouring over desserts, or cool & refrigerate for later. It keeps for a week in the fridge or 3 months in the freezer.
Freeze in ice-cube trays and you have delicious treats to pop into cold drinks. I especially like them with Gin and Tonic.
Mix the roasted strawberries with a can of coconut milk and pour into popsicle trays and freeze.
Strawberries have more vitamin C than oranges and they are also a powerful anti- inflammatory.
Strawberries can be yellow, blue, white, black and purple.
In medieval times, serving strawberries at important ceremonies was thought to bring peace and prosperity.
They are the only fruit to have seeds on the outside.
Not surprisingly, given how finger lickin strawberries are, they are an #aphrodisiac. In some areas of France newlyweds consume strawberry soup.
