How to make Easy Avocado pesto in 5 minutes

Makes: 2-4 portions depending on size
Time: less than 5 minutes
Now I have a blender I am coming up with fun ways to use it. My blender also has a setting for cleaning. I half fill the jug with water and a little washing up liquid and it whizzes it clean in no time. I can just drain it and wipe it clean.

Ingredients
1 avocado, skinned and pitted. (To pitt, take a dessert spoon and slide it under the pit and pop it out).
½ lemon, juiced
1 tbsp olive oil
25g Parmesan, plus a little extra for grating
2-4 tortilla wraps

Filling Suggestions: choose from
Handful of shredded cooked meat, cooked chicken or cold chopped sausages,
Cooked fish (shop-bought or leftovers)
Stir fried or left-over vegetables
Small tin of tuna
Handful of cooked prawns
Cooked bacon or ham
Chopped boiled egg
Lettuce
Equipment
Chopping board
Sharp knife
Lemon squeezer
Dessert spoon
Blender
Cheese grater
Small flat pan (if following the alternaative suggesion below)
Drinking glasses or plate
Method
Cut the skinned and pitted avocado into 4 pieces and whizz it in a blender with lemon juice, olive oil and Parmesan
Spoon pesto over the tortilla, add your choice of filling and a little grated Parmesan.
Roll up and cut in half
Ready to eat
Chefs Tips and Tricks
Another delicious method is to heat your flour tortilla in a shallow pan, with a little oil for one minute.
Spread the avocado pesto and any filling on top, sprinkle with parmesan or mozzerela. Placed a second tortilla on top like a sandwich and flip it over with a flat spatula to heat the other side.
Carefully flip onto a plate with a spatula
Ready to eat like a round sandwhich.
Of course you can just use Mexican corn tortillas or toasted bread and make a sandwich in the same way.
