how to make an omelete in a mug in 2 minutes

Fresh, healthy food. Seriously, in under 2 minutes?
When I got ditched by my husband of 16 years, for a hairy German hausfrau, I made the decision that instead of gourmet dinners for 2, I was going to make my life easy. Result: #omelleteinamug I now I have oodles of spare time for socialising, my various hobbies and meeting family, friends and new loves.

Time: 2 minutes or less
All chefs know how to eat nutritiously on the go, here’s one of my absolute favourite quickies. When I’m starving and can’t wait to cook, but I do not want to reheat any preservative loaded fast food or order a take-away. This is it. Nutritious and healthy.
Eat it for breakfast, lunch, dinner or as fun party food.
Ingredients
1 to 3 eggs
1 tbsp of cooked fish, meat or veggies, (suggestions: leftover cooked fish, chicken, beef, turkey, diced ham, bacon, any cooked vegetable)
1 tbs of chopped tomatoes
1 tbs shredded cheese or shredded cheese substitute
1 tbs of milk or milk substitute
1 tsp of dried herbs: oregano, dill, parsley or coriander (optional)
olive oil or cooking spray
salt and pepper
Equipment
Mug, fork, microwave lid, microwave oven

Method
Grab your favourite mug.
Wipe the inside of your mug with olive oil or cooking spray.
Add eggs and milk to the mug and whisk together with a fork.
Add diced meat, fish or vegetables, a tablespoon of chopped tomatoes, optional herbs, shredded cheese, salt, and pepper.
Whisk all ingredients together with a fork, until they are completely mixed.
Cover mug and microwave on high for one minute.
Stir and break up any large chunks of egg with a fork.
If necessary, microwave for another 45 to 60 seconds or until eggs are completely set.
Optional, top with more grated cheese, salt and pepper.
Chefs Tips and Tricks
If you have leftover mash potatoes or cooked pasta, add some to a larger mug or bowl for a complete meal
